We are are going to marinate the chickens in the mole sauce, then roast them until they fall of the bone. The sauce consists of many varieties of dried red chilies, onions, garlic, tomatoes, plantains, almonds and a little chocolate stewed together. Served with the fixin's below $16 per portion Slow Roasted Chile Verde Pork Garlic, thyme, marjoram, onions and lots of fresh roasted anahiem chilies slowly roasted with smoky pork and served with a side of the fixin's below $16 per portion Hearty Beef Chile Colorado Braised beef, potatoes, garlic, roasted chilies and onion in a tomato and ancho chile broth topped with a table sauce of chile verde. This earthy dish is great with a side of the fixin's below (included) $17 per portion Sautéed Red Snapper Veracruz I make this dish a little lighter than some versions with very light tomato and fish broth seasoned with garlic, onion, chilies, green olives, capers, oregano and parsley.
