Menu For The Week of March 26th

This Week's Theme: "Pastas, Smokeys, and some Gnocchis"
Wild Mushroom and Roast Shallot Ravioli Appetizer Sautéed portobello, white and shitake mushrooms with roasted shallots in a thyme and red wine scented demi-glace stuffing with gossamer thin sheets of pasta poached in a Italian parsley, veggie stock and extra virgin olive oil emulsion. These were popular and quite tasty last week, so we decided to try them again this week. $10 per portion Smoked Utah Trout With Baby Lentils Appetizer Citrus and chipotle marinated fresh Utah trout filet slowly smoked over California Red Oak with a generous helping of our mirepoix filled baby French lentils. This could be an entrée paired with a nice salad $12 per serving Classic Chopped Salad Mushrooms, roasted red peppers, sautéed onions, garbanzo beans, diced tomatoes, diced Romaine lettuce and Pecorino Romano cheese in a garlic and basil dressing $7 per portion Ratatouille and Romano Cheese Gnocchi Slowly stewed onions, peppers, zucchini, eggplant and tomatoes with Kalamata olives and Romano cheese flavored potato gnocchi in a light tomato, basil and olive oil sauce $14 per portion Pomo2Go Veggie Lasagna This classic dish is made from layers of lasagna noodles, veggie-ricotta and mozzarella cheese mix (zucchini, red peppers, mushrooms and eggplant) and our Marinara sauce baked in the oven until golden and bubbly. $14 per portion Linguine Bolognese Ground beef, onions, garlic and red wine and fresh linguine dominate this dish. Not really a true Bolognese, but this is the version I first liked and it is how we made it at Pomodoro. It also pairs beautifully with a glass of red wine. $14 per portion Stuffed Breast of Chicken Italienne Stuffed breast of chicken with a mushroom, shallot and smokey ham stuffing served with a chianti-tomato demi-glace with soft polenta and house veggies. $18 per portion Smokey Brisket of Beef Chipotle rubbed brisket of beef slowly smoked in our smoker until tender. Served with country-style low-fat mashed potatoes and baby green beans in a hoisin and tomato flavored demi glace. Go ahead and feel decadent as you gobble this dish down! $16 per portion Fresh Halibut With Spring Veggies Sautéed filet of Halibut with a garlic and lemon veggie sauce with zucchini, leeks, asparagus, whole garlic cloves, fresh basil, lemon in a light fish broth with E.V. olive oil. Halibut season only opened up last week and therefore, the price is very high, but it will come down soon. We will adjust it down soon but it was beautifully fresh last week. $25 per portion Individual Fruit Tarts Chocolate-painted-shortbread tart shells with a thin layer of coconut and vanilla scented creme anglaise with assorted organic fruits and topped with reduced apricot glaze. $3.50 each House Veggies: Something Good To Be Announced (Definitely something green...and...?)

Kind of a silly name for the this week's theme but we recently added a dedicated smoker to our cooking arsenal, so you might see a few more home-smoked items.
We are toying with the idea of running a few of our favorite dishes from ANY country instead of following a specific theme. We might have a crazy collection of goodies from apple tarts to zebra stew (just kidding...). We will keep you posted, of course.
